To me, the smell of roasting Hatch New Mexico green chile is one of the most incredibly delightful smells in the entire world. There is a fella here in my town who drives down to New Mexico and brings back a truckload of green chile and roasts them in one of those cylindrical roasting machines for a couple of weeks each September. I go and stand in front of the roasting machine and inhale as deeply as I can the aroma of the roasting chiles. Then I buy as much as I can to hopefully last me until the next September. Of course I can never buy enough. I’ll fill my freezer but invariably I’m out by April or May and I end up jonesing for several months. I might just have to move back to New Mexico.
