Here’s the recipe from the Southern Rockies:

Warm up some unsalted, sweet cream butter in a small stainless steel frying pan. Throw in and sautee some hot roasted New Mexico green chile peppers. When heated, put the green chile onto a warmed plate then drop two or three eggs into the frying pan, cover and poach the eggs. When they are done cut away the egg whites — they are completely and utterly useless — and scoop the poached egg yolks onto the New Mexico green chile. And that is all that is required.

Forget the muffins, forget the skillet, forget the paper towels, forget the salt…. just egg yolks and hot New Mexico green chiles. It is the food of the gods. It will get you through the most goddawful winter day imaginable. It might very well throw you into a whole new dimension of existence. It may even change your life forever.

Just to be clear, when I refer to chile (with an ‘e’ at the end) I am referring to a vegetable in the pepper family. When I am referring to chili (with an ‘i’ at the end) I am referring to a tomato-based meat stew. It is something that one adds to a hot dog to turn it into a “chili dog.” Chile (with an ‘e’ at the end) is a freaking vegetable! It may also be a country in South America but that is utterly besides the point! “Chile” is a vegetable goddam it! 99% of Americans get the spellings confused. This has always pissed me off but I am currently trying my hardest to remain calm.

Chile.

It’s a vegetable.

Chili.

It’s a stew.

Can we all please get this correct?

Internet “autocorrect” just doesn’t get this. That is because internet “autocorrect” was designed by a bunch of ignorant San Francisco nerds who wouldn’t know a green chile if it slapped them across the face. Apparently, though, they have all had chili dogs so they think they know what they’re talking about. They think they know the correct spellings.

But they don’t!!!!!

Those stupid geek/nerds!

Goddam San Francisco!

If any of those super-young geek/nerds of San Francisco had ever eaten a true New Mexico green chile they would know the difference in spelling as well as the difference in culinary euphoria.

Sadly, they don’t know the difference due to their profound lack of experience. And the whole internet world suffers because of it!

Those goddam San Francisco bastards!
